These No-Bake Buckeye Graham Crackers are a delightful treat, combining the rich flavors of peanut butter, chocolate, and graham crackers for an easy and irresistible snack. Perfect for anyone craving a simple, no-bake dessert.
Ingredients
Scale
- 1 package (144 oz) graham crackers
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/2 cup brown sugar, packed
- 1 cup chocolate chips
- 1 tablespoon coconut oil (optional, for consistency)
- Additional peanut butter for drizzling (optional)
Instructions
- In a mixing bowl, combine the creamy peanut butter, powdered sugar, and brown sugar. Mix until smooth and well combined.
- Take one graham cracker and spread a generous layer of the peanut butter mixture over it. Top with another graham cracker, creating a sandwich. Repeat until all graham crackers are used.
- Place the filled crackers in the refrigerator to set for about 30 minutes.
- While the filled crackers are chilling, melt the chocolate chips and coconut oil (if using) together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth.
- Retrieve the graham cracker sandwiches from the fridge. Dip each sandwich quickly into the melted chocolate and place it on a wax-paper-lined baking sheet.
- If desired, drizzle extra peanut butter over the top of each chocolate-coated cracker.
- Allow the chocolate to set at room temperature or place them in the fridge.
- Once the chocolate has hardened, slice into squares or serve them whole.
Notes
- Store any leftovers in an airtight container in the fridge for up to a week.
- For an extra touch, sprinkle crushed nuts or sea salt over the chocolate before it sets.
