For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
For the cheesecake filling:
- 4 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy cream
For the strawberry topping:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
- In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spread the cheesecake filling evenly over the chilled crust.
- In a small saucepan, combine strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens and the strawberries soften, about 5-7 minutes. Allow to cool slightly.
- Pour the strawberry topping over the cheesecake filling. Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a firmer cheesecake, allow it to chill overnight.
- You can use frozen strawberries if fresh ones are not available; just adjust the sugar as needed.
