For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the cheesecake filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
  • In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix well.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Spread the cheesecake filling evenly over the chilled crust.
  • In a small saucepan, combine strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens and the strawberries soften, about 5-7 minutes. Allow to cool slightly.
  • Pour the strawberry topping over the cheesecake filling. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a firmer cheesecake, allow it to chill overnight.
  • You can use frozen strawberries if fresh ones are not available; just adjust the sugar as needed.
