  • 46 cups powdered sugar (may need more)

  • 1/2 cup creamy peanut butter

Instructions

  • Cook the Potato:
    Peel the small potato and cut it into chunks. Boil it in a pot of water until tender. Drain the water, and mash the potato until smooth with no lumps.
  • Add the Powdered Sugar:
    Place the mashed potato in a large mixing bowl. Start adding the powdered sugar, 1 cup at a time, stirring after each addition. The mixture will become thin and runny at first, but as you keep adding sugar, it will start to thicken and form a dough. Continue adding powdered sugar until a thick, pliable dough forms. This could take anywhere from 4 to 6 cups of sugar.
  • Add Vanilla (Optional):
    If you’d like, mix in 1 teaspoon of vanilla extract to add extra flavor.
  • Roll Out the Dough:
    On a clean surface dusted with powdered sugar, roll out the potato candy dough into a large rectangle, about 1/4-inch thick.
  • Spread the Peanut Butter:
    Spread a thin layer of creamy peanut butter evenly over the surface of the dough.
  • Roll the Candy:
    Starting from one edge, carefully roll the dough into a log, jelly-roll style, similar to how you would roll cinnamon rolls.
  • Chill and Slice:
    Wrap the log in plastic wrap and refrigerate for about 30 minutes to firm up. Once chilled, slice the log into 1/4-inch thick pieces.
