Description

This One Pan Balsamic Chicken is a flavorful, easy-to-make dish featuring tender chicken breasts smothered in a sweet and tangy balsamic glaze, topped with juicy grape tomatoes, creamy fresh mozzarella, and fresh basil. Perfect for a quick weeknight dinner, it’s made in just one pan for minimal cleanup.


Ingredients

Sauce:

  • 1/3 cup balsamic vinegar

  • 2 tablespoons honey

  • 2 tablespoons oil (such as avocado or olive oil)

  • 2 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • 1 tablespoon Dijon mustard

Tomato Mozzarella:

  • 8 oz. grape tomatoes, halved

  • 8 oz. fresh mozzarella balls (ciliegine or pearls)

  • 2 tablespoons finely chopped fresh basil

Chicken:

  • 2 lb. boneless, skinless chicken breasts, pounded to even thickness

  • 2 tablespoons avocado oil (or other high-heat oil)

  • Kosher salt, to taste

  • Fresh black pepper, to taste


Instructions

  • Prepare the Sauce: In a small bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Set aside.

  • Prepare the Chicken: Season the chicken breasts with kosher salt and freshly ground black pepper on both sides. Heat avocado oil in a large skillet over medium-high heat.

  • Cook the Chicken: Add the chicken breasts to the hot pan and cook for about 6-7 minutes per side, until golden brown and fully cooked through. Remove the chicken from the pan and set aside.

  • Make the Balsamic Glaze: In the same skillet, pour in the prepared balsamic sauce and cook over medium heat, stirring occasionally, for about 2-3 minutes until it thickens slightly.

  • Assemble the Dish: Return the chicken to the skillet, spoon the balsamic glaze over it, and cook for an additional 1-2 minutes to coat the chicken with the sauce.

  • Add Tomato Mozzarella Topping: Scatter the halved grape tomatoes, fresh mozzarella balls, and chopped basil over the chicken. Cover the skillet and cook for 2-3 minutes, just until the mozzarella starts to melt and the tomatoes soften.

 

  • Serve: Serve the chicken with the melted mozzarella and tomatoes on top, drizzling extra balsamic sauce from the pan over everything. Enjoy!

Notes

  • You can substitute chicken thighs for breasts if you prefer.

  • This dish pairs well with a side of roasted vegetables or a fresh salad.

  • If you don’t have fresh mozzarella, you can use shredded mozzarella as an alternative.
