Ingredients
Sauce:

Tomato Mozzarella:

8 oz. grape tomatoes, halved

8 oz. fresh mozzarella balls (ciliegine or pearls)

Chicken:

2 lb. boneless, skinless chicken breasts, pounded to even thickness

2 tablespoons avocado oil (or other high-heat oil)

Instructions

Prepare the Sauce: In a small bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Set aside.

Prepare the Chicken: Season the chicken breasts with kosher salt and freshly ground black pepper on both sides. Heat avocado oil in a large skillet over medium-high heat.

Cook the Chicken: Add the chicken breasts to the hot pan and cook for about 6-7 minutes per side, until golden brown and fully cooked through. Remove the chicken from the pan and set aside.

Make the Balsamic Glaze: In the same skillet, pour in the prepared balsamic sauce and cook over medium heat, stirring occasionally, for about 2-3 minutes until it thickens slightly.
