Description

This creamy, one-pan dish features tender chicken breasts, perfectly cooked rice, and a rich Parmesan sauce. Simple to prepare and full of flavor, it’s an easy weeknight dinner that will impress everyone at the table.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides.

  • Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until browned and cooked through. Remove the chicken from the skillet and set aside.

  • In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

  • Add the rice to the skillet and stir to combine with the onion and garlic.

  • Pour in the chicken broth and heavy cream, stirring to mix everything together. Bring to a simmer.

  • Reduce the heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.

  • Grate the Parmesan cheese and stir it into the rice, creating a creamy sauce.

  • Return the chicken breasts to the skillet, nestling them into the rice. Cover and cook for an additional 5 minutes, allowing the chicken to heat through and absorb the flavors.

  • Garnish with fresh chopped parsley before serving.

Notes

  • You can use bone-in chicken breasts if preferred, but be sure to adjust the cooking time.

  • For extra flavor, you can add a pinch of red pepper flakes or some lemon zest to the rice.

  • This recipe can easily be doubled for a larger family or meal prep.
