Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Instructions

Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides.

Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until browned and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Add the rice to the skillet and stir to combine with the onion and garlic.

Pour in the chicken broth and heavy cream, stirring to mix everything together. Bring to a simmer.

Reduce the heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.

Grate the Parmesan cheese and stir it into the rice, creating a creamy sauce.

Return the chicken breasts to the skillet, nestling them into the rice. Cover and cook for an additional 5 minutes, allowing the chicken to heat through and absorb the flavors.

You can use bone-in chicken breasts if preferred, but be sure to adjust the cooking time.
