Description

Ingredients

  • 1 pound boneless skinless chicken breast, cut into bite-size pieces

  • 2 tablespoons olive oil

  • 2 teaspoons Cajun seasoning

  • 2 teaspoons minced garlic (about 2 cloves)

  • 1½ cups chicken broth

  • 1 cup half and half

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • ¼ teaspoon garlic powder

  • 8 ounces uncooked fettuccine pasta

  • ½ cup grated Parmesan cheese


Instructions

  • Heat olive oil in a large deep skillet or pot over medium-high heat.

  • Add the chicken pieces and season with Cajun seasoning. Sauté until browned and cooked through, about 5–6 minutes.

  • Add minced garlic and cook for 30 seconds until fragrant.

  • Pour in chicken broth and half and half. Stir in salt, black pepper, and garlic powder.

  • Add the uncooked fettuccine pasta and bring the mixture to a gentle boil.

  • Reduce heat to a simmer and cook uncovered for 12–15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

  • Stir in grated Parmesan cheese until melted and smooth.

  • Adjust seasoning if needed and serve hot.

  • Add spinach or sun-dried tomatoes for extra flavor and nutrition.

  • Use heavy cream instead of half and half for a richer sauce.

  • Leftovers can be stored in the fridge for up to 3 days. Reheat with a splash of milk if needed.
