Ingredients
-
1 pound boneless skinless chicken breast, cut into bite-size pieces
-
2 tablespoons olive oil
-
2 teaspoons Cajun seasoning
-
2 teaspoons minced garlic (about 2 cloves)
-
1½ cups chicken broth
-
1 cup half and half
-
1 teaspoon salt
-
1 teaspoon ground black pepper
-
¼ teaspoon garlic powder
-
8 ounces uncooked fettuccine pasta
-
½ cup grated Parmesan cheese
Instructions
-
Heat olive oil in a large deep skillet or pot over medium-high heat.
-
Add the chicken pieces and season with Cajun seasoning. Sauté until browned and cooked through, about 5–6 minutes.
-
Add minced garlic and cook for 30 seconds until fragrant.
-
Pour in chicken broth and half and half. Stir in salt, black pepper, and garlic powder.
-
Add the uncooked fettuccine pasta and bring the mixture to a gentle boil.
-
Reduce heat to a simmer and cook uncovered for 12–15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
-
Stir in grated Parmesan cheese until melted and smooth.
- Adjust seasoning if needed and serve hot.
Notes
-
Add spinach or sun-dried tomatoes for extra flavor and nutrition.
-
Use heavy cream instead of half and half for a richer sauce.
- Leftovers can be stored in the fridge for up to 3 days. Reheat with a splash of milk if needed.
