Ingredients

  • 4 tablespoons olive oil, divided
  • 1 1/2 pounds chicken breast, diced
  • 4 cloves garlic, minced
  • 1 quart low-sodium chicken broth
  • 2 cups heavy cream
  • 1 pound penne pasta
  • 4 cups parmesan cheese, freshly shredded with a microplane
  • Salt, to taste
  • Pepper, to taste
  • Parsley, for garnish

Instructions

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the diced chicken breast, season with salt and pepper, and cook until browned and fully cooked. Remove the chicken from the pot and set it aside.
  • In the same pot, add the remaining 2 tablespoons of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and bring it to a simmer.
  • Add the penne pasta and cook according to package instructions, stirring occasionally.
  • Once the pasta is cooked, reduce the heat and add the heavy cream, stirring to combine.
  • Gradually add the freshly shredded parmesan cheese, stirring until melted and smooth.
  • Return the cooked chicken to the pot and mix everything together.
  • Adjust seasoning with salt and pepper, if necessary.
  • Garnish with parsley and serve immediately.

  • For extra richness, use full-fat heavy cream.
  • You can substitute the chicken breast with boneless, skinless chicken thighs for a juicier result.
