- 4 tablespoons olive oil, divided
- 1 1/2 pounds chicken breast, diced
- 4 cloves garlic, minced
- 1 quart low-sodium chicken broth
- 2 cups heavy cream
- 1 pound penne pasta
- 4 cups parmesan cheese, freshly shredded with a microplane
- Salt, to taste
- Pepper, to taste
- Parsley, for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the diced chicken breast, season with salt and pepper, and cook until browned and fully cooked. Remove the chicken from the pot and set it aside.
- In the same pot, add the remaining 2 tablespoons of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the chicken broth and bring it to a simmer.
- Add the penne pasta and cook according to package instructions, stirring occasionally.
- Once the pasta is cooked, reduce the heat and add the heavy cream, stirring to combine.
- Gradually add the freshly shredded parmesan cheese, stirring until melted and smooth.
- Return the cooked chicken to the pot and mix everything together.
- Adjust seasoning with salt and pepper, if necessary.
- Garnish with parsley and serve immediately.

- For extra richness, use full-fat heavy cream.
- You can substitute the chicken breast with boneless, skinless chicken thighs for a juicier result.
