This One-Pot Chicken Parmesan Pasta brings together the flavors of classic chicken Parmesan in a simple, one-pot dish. Tender, seasoned chicken is simmered with penne pasta in a rich marinara sauce, then topped with gooey mozzarella and Parmesan cheese for a comforting, family-friendly meal. No need to boil pasta separately—everything cooks in one pot!

- 1 lb boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 (24 oz) jar marinara sauce
- 2 cups chicken broth
- 8 oz penne pasta
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Season chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on both sides. Remove chicken and set aside.
- In the same pot, add minced garlic and cook for about 1 minute until fragrant.
- Stir in marinara sauce, chicken broth, and penne pasta. Bring to a simmer.
- Slice the cooked chicken and add it back to the pot. Cover and cook until pasta is tender, about 12-15 minutes.
- Sprinkle mozzarella and Parmesan cheese over the top of the pasta and chicken. Cover and let the cheese melt.
- Garnish with fresh basil leaves before serving.
Notes
- For a spicier kick, add red pepper flakes when cooking the garlic.
- You can use other types of pasta, but penne works well in this dish for its ability to hold the sauce.
- To make it even more like classic chicken Parmesan, you can top the dish with additional crispy breadcrumbs or a sprinkle of extra Parmesan before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days.
