This comforting one-pot dish combines tender chicken, flavorful risoni (or orzo), and the delicious crunch of crispy salami. It’s an easy and quick meal, packed with protein and rich in flavor, perfect for a weeknight dinner.

- 1 tbsp olive oil
- 100g salami, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 500g chicken breast, diced
- 1 cup risoni (or orzo pasta)
- 2 cups chicken broth
- 1 cup frozen peas
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced salami and cook until crispy, then remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until softened.
- Add the diced chicken breast and cook until browned on all sides.
- Stir in the risoni and chicken broth. Bring to a simmer and cook for about 10 minutes, stirring occasionally, until the risoni starts to soften.
- Add the frozen peas and cook for an additional 5 minutes, or until the risoni is cooked through and the peas are tender.
- Season with salt and pepper to taste.
- Serve the chicken risoni topped with the crispy salami and a generous sprinkle of grated Parmesan cheese.

- You can swap chicken breasts with thighs for a juicier option.
