This One-Pot Creamy Chicken and Spinach Pasta is a quick and delicious meal that combines tender chicken, fresh spinach, and creamy sauce, all cooked in one pot for easy cleanup.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 1/2 cups milk
- 8 oz penne pasta
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chicken and season with salt and pepper. Cook until browned, about 6-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth, milk, and pasta. Stir well and bring to a boil. Reduce heat and let it simmer, stirring occasionally, for about 10-12 minutes, or until the pasta is tender.
- Stir in the Parmesan cheese until the sauce becomes creamy. Add the chicken back to the pot along with the spinach. Stir until the spinach wilts.
- Adjust seasoning with salt, pepper, and red pepper flakes if desired. Serve hot.
Notes
For added flavor, consider marinating the chicken in Italian seasoning before cooking.
