This hearty One Pot Lasagna Soup combines the flavors of classic lasagna into a comforting soup, complete with ground beef, Italian sausage, and a creamy cheese blend. Perfect for busy weeknights!

- 1 lb ground beef
- 1/2 lb Italian sausage, casing removed
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 (24 oz) jar marinara sauce
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil, chopped for garnish
- Olive oil, for cooking
Instructions
- Heat a large pot over medium-high heat and add a drizzle of olive oil. Add ground beef and Italian sausage, breaking them apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion to the pot and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
- Pour in marinara sauce, chicken broth, diced tomatoes, and tomato paste. Stir to combine. Add dried basil, oregano, and red pepper flakes. Bring the soup to a boil.
- Add the lasagna noodles to the pot and reduce heat to a simmer. Cook, uncovered, for 10-12 minutes, or until the noodles are tender.
- Stir in the heavy cream, and adjust seasoning with salt and pepper. Simmer for an additional 2 minutes to meld the flavors.
- In a small bowl, mix together ricotta cheese, mozzarella cheese, and Parmesan cheese.
- Serve the soup hot, topped with a dollop of the cheese mixture and a sprinkle of fresh basil.

- Feel free to substitute the ground beef with ground turkey or chicken for a lighter version.
