Description

This hearty One Pot Lasagna Soup combines the flavors of classic lasagna into a comforting soup, complete with ground beef, Italian sausage, and a creamy cheese blend. Perfect for busy weeknights!


Ingredients

  • 1 lb ground beef
  • 1/2 lb Italian sausage, casing removed
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil, chopped for garnish
  • Olive oil, for cooking

Instructions

  • Heat a large pot over medium-high heat and add a drizzle of olive oil. Add ground beef and Italian sausage, breaking them apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion to the pot and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
  • Pour in marinara sauce, chicken broth, diced tomatoes, and tomato paste. Stir to combine. Add dried basil, oregano, and red pepper flakes. Bring the soup to a boil.
  • Add the lasagna noodles to the pot and reduce heat to a simmer. Cook, uncovered, for 10-12 minutes, or until the noodles are tender.
  • Stir in the heavy cream, and adjust seasoning with salt and pepper. Simmer for an additional 2 minutes to meld the flavors.
  • In a small bowl, mix together ricotta cheese, mozzarella cheese, and Parmesan cheese.
  • Serve the soup hot, topped with a dollop of the cheese mixture and a sprinkle of fresh basil.

Notes

  • Feel free to substitute the ground beef with ground turkey or chicken for a lighter version.
  • Add vegetables like spinach or zucchini for extra nutrition.
