  • 1 box brownie mix (plus ingredients required on the box, typically eggs, oil, and water)
  • 24 Oreo cookies
  • 1/4 cup melted butter
  • 1.5 quarts vanilla ice cream (softened)
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers

Instructions

  • Preheat the oven to 350°F (175°C). Prepare the brownie mix according to package instructions.
  • Crush 16 Oreo cookies into small pieces and stir them into the brownie batter.
  • Pour the brownie batter into a greased 9×13-inch baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the dish.
  • In a medium bowl, combine the melted butter and crushed graham crackers. Press the graham cracker mixture into the bottom of a 9-inch springform pan to form a crust.
  • Soften the vanilla ice cream and spread it evenly over the graham cracker crust.
  • Top the ice cream with the remaining whole Oreo cookies, mini marshmallows, and chocolate chips.
  • Cover the cake with plastic wrap or foil and freeze for at least 4 hours or overnight until set.
  • Slice and serve cold!

Notes

  • You can use any type of brownie mix, but fudgy brownies work best for this dessert.
  • If you prefer a more intense s’mores flavor, you can toast the mini marshmallows slightly under a broiler or with a kitchen torch before adding them to the cake.
  • This dessert can be made up to 2-3 days in advance and stored in the freezer.
