These vibrant orzo-stuffed peppers are filled with a delicious mixture of orzo, crispy prosciutto, and topped with creamy burrata cheese. A perfect blend of flavors and textures, they make for an impressive and satisfying dish!

- 4 large bell peppers
- 1 cup orzo
- 4 slices prosciutto
- 1 ball burrata cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Cook the orzo according to package instructions.
- In a skillet, cook the prosciutto until crispy. Remove from the skillet and crumble into small pieces.
- In a bowl, mix together the cooked orzo, crumbled prosciutto, Parmesan cheese, olive oil, salt, and pepper.
- Stuff the peppers with the orzo mixture and place them in a baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Top each pepper with a slice of burrata cheese and bake for an additional 5 minutes, until the cheese is melted.
- Serve hot and enjoy!
Notes
For an added touch, drizzle with balsamic reduction before serving.
