Description

These vibrant orzo-stuffed peppers are filled with a delicious mixture of orzo, crispy prosciutto, and topped with creamy burrata cheese. A perfect blend of flavors and textures, they make for an impressive and satisfying dish!


Ingredients

  • 4 large bell peppers
  • 1 cup orzo
  • 4 slices prosciutto
  • 1 ball burrata cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • Cook the orzo according to package instructions.
  • In a skillet, cook the prosciutto until crispy. Remove from the skillet and crumble into small pieces.
  • In a bowl, mix together the cooked orzo, crumbled prosciutto, Parmesan cheese, olive oil, salt, and pepper.
  • Stuff the peppers with the orzo mixture and place them in a baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  • Top each pepper with a slice of burrata cheese and bake for an additional 5 minutes, until the cheese is melted.
  • Serve hot and enjoy!

Notes

For an added touch, drizzle with balsamic reduction before serving.
