- 2 sea bass fillets
- 2 tbsp olive oil
- 1 red chili, finely chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 2 cups mixed greens (such as spinach, kale, or chard)
- Salt and pepper to taste
Instructions
- Heat the oil: Heat olive oil in a large skillet over medium heat.
- Cook the sea bass: Season the sea bass fillets with salt and pepper, then place them in the skillet, skin side down. Cook for 5-6 minutes until the skin is crispy, then flip the fillets and cook for another 3-4 minutes.
- Set aside: Remove the sea bass from the skillet and set aside.
- Prepare the chili & greens: In the same skillet, add the chopped chili, garlic, and grated ginger. Cook for 1-2 minutes until fragrant.
- Wilt the greens: Add the mixed greens to the skillet and cook until they are wilted.
- Serve: Serve the sea bass fillets on a bed of the chili and greens mixture.

- You can adjust the heat by using more or less chili, depending on your spice preference.
