Roasted Grapes and Aromatics

  • 1 cup seedless grapes (red or green)
  • 4 garlic cloves, whole and peeled
  • 3 sprigs fresh thyme or rosemary
  • 2 tablespoons balsamic vinegar

Instructions

  1. Prep the Chicken: Pat the chicken thighs dry with paper towels and season generously with salt and pepper. This step ensures crispy skin and enhances the meat’s flavor.
  2. Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Place the chicken skin-side down and sear for 5 to 7 minutes without moving until the skin is golden brown and crispy. Flip and cook for another 3 minutes to seal in the juices.
  3. Roast with Grapes: Add the grapes, whole garlic cloves, fresh thyme or rosemary sprigs, and a splash of balsamic vinegar to the skillet. Transfer to a preheated oven at 400°F (200°C) and roast for 15 to 20 minutes, basting occasionally, until the chicken is cooked through and the grapes are soft and caramelized.
