- 4 cod fillets
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup chopped fresh basil
- 1/4 cup black olives, sliced
- 1/4 cup capers
- 1/4 teaspoon red pepper flakes
Instructions
- Season the cod fillets with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Add the cod fillets to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until softened and fragrant, about 3 minutes.
- Stir in the diced tomatoes, fresh basil, sliced olives, capers, and red pepper flakes. Let the sauce simmer for 5-7 minutes, allowing the flavors to meld together.
- Return the cod fillets to the skillet, spooning the tomato basil sauce over the top. Cook for an additional 2-3 minutes, letting the cod absorb the flavors of the sauce.
- Serve hot, garnished with extra basil if desired, and enjoy!

- You can substitute the cod with another white fish such as halibut or tilapia if preferred.
