This Pan-Seared Mediterranean Cod in Tomato Basil Sauce is a delicious and healthy dish featuring tender cod fillets paired with a savory, tangy tomato sauce filled with olives, capers, and fresh basil. It’s a quick and flavorful way to bring the tastes of the Mediterranean to your table.


Ingredients

  • 4 cod fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup black olives, sliced
  • 1/4 cup capers
  • 1/4 teaspoon red pepper flakes

Instructions

  • Season the cod fillets with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium heat.
  • Add the cod fillets to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
  • In the same skillet, add the diced onion and minced garlic. Sauté until softened and fragrant, about 3 minutes.
  • Stir in the diced tomatoes, fresh basil, sliced olives, capers, and red pepper flakes. Let the sauce simmer for 5-7 minutes, allowing the flavors to meld together.
  • Return the cod fillets to the skillet, spooning the tomato basil sauce over the top. Cook for an additional 2-3 minutes, letting the cod absorb the flavors of the sauce.
  • Serve hot, garnished with extra basil if desired, and enjoy!

Notes

  • You can substitute the cod with another white fish such as halibut or tilapia if preferred.
  • Serve with a side of crusty bread or over rice to soak up the delicious sauce.
