Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dredge the asparagus spears in flour, then dip them in the beaten eggs, allowing any excess to drip off.
- Coat the asparagus with a mixture of panko breadcrumbs and grated Parmesan, pressing gently to adhere.
- Arrange the coated asparagus on the prepared baking sheet and spray lightly with olive oil.
