Ingredients

2 pounds carrots, washed, scrubbed, and diagonally cut into 3-inch pieces

4 tablespoons butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon salt, or to taste

1/4 teaspoon freshly ground black pepper

1/3 cup grated Parmesan cheese

1/4 cup chopped fresh parsley
Instructions

Preheat oven to 400°F (200°C).

In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.

Place carrots on a large baking sheet. Drizzle with the garlic butter and sprinkle with Italian seasoning, salt, and pepper. Toss to coat evenly.

Roast in the oven for 20–25 minutes, stirring halfway through, until carrots are tender and lightly browned.

Remove from oven, sprinkle with Parmesan cheese, and return to oven for 3–5 minutes until cheese is melted and golden.
