Description

These Parmesan Garlic Roasted Carrots are a simple yet flavorful side dish. Tender roasted carrots are coated with buttery garlic, Italian herbs, and savory Parmesan cheese, then finished with a sprinkle of fresh parsley. A perfect accompaniment to any meal.


Ingredients

  • 2 pounds carrots, washed, scrubbed, and diagonally cut into 3-inch pieces

  • 4 tablespoons butter

  • 4 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon salt, or to taste

  • 1/4 teaspoon freshly ground black pepper

  • 1/3 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley


Instructions

  • Preheat oven to 400°F (200°C).

  • In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.

  • Place carrots on a large baking sheet. Drizzle with the garlic butter and sprinkle with Italian seasoning, salt, and pepper. Toss to coat evenly.

  • Roast in the oven for 20–25 minutes, stirring halfway through, until carrots are tender and lightly browned.

  • Remove from oven, sprinkle with Parmesan cheese, and return to oven for 3–5 minutes until cheese is melted and golden.

  • Garnish with fresh parsley before serving.

  • For a crisper texture, broil the carrots for an additional 2–3 minutes after roasting.
