Description

  • For the Pecan Pie Filling:
    • 1 1/2 cups chopped pecans
    • 1 cup packed brown sugar
    • 1/2 cup light corn syrup
    • 1 teaspoon vanilla extract
    • 3/4 cup hot water
    • 1/4 cup unsalted butter, cut into small pieces

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  • Make the Cobbler Batter:
    In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar. Add the milk, vanilla extract, and melted butter, stirring until the mixture is smooth. Pour the batter into the prepared baking dish and spread it evenly.
  • Prepare the Pecan Filling:
    Sprinkle the chopped pecans evenly over the batter. In a separate bowl, whisk together the brown sugar, light corn syrup, vanilla extract, and hot water until the sugar is dissolved.
  • Add the Filling to the Dish:
    Pour the brown sugar mixture over the pecans and batter in the baking dish. Do not stir. Dot the top with pieces of the cut butter.
  • Bake the Cobbler:
    Bake for 35-40 minutes, or until the cobbler is golden brown and the filling is bubbly. The center may still be slightly gooey, which is perfect for the cobbler’s texture.
  • Serve:
    Let the Pecan Pie Cobbler cool slightly before serving. You can serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • You can use whole pecan halves instead of chopped pecans for a more rustic presentation.
