Description

Pepper Steak in a Crock Pot is a tender and flavorful dish that combines juicy steak strips with bell peppers, onions, and a savory sauce. Slow-cooked to perfection, this comforting meal is served over hot rice for a satisfying dinner. The easy prep and hands-off cooking make it an ideal weeknight meal, full of robust flavors with minimal effort.

Ingredients

Scale
  • 1 1/2 lbs. round steak, cut into thin strips
  • 1 onion, chopped
  • 1 green bell pepper, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1/4 cup soy sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. garlic powder
  • 1/2 cup beef broth
  • 2 tbsp. cornstarch
  • Hot cooked rice (for serving)

Instructions

  • In a crock pot, combine the steak strips, onion, green bell pepper, diced tomatoes, soy sauce, sugar, salt, pepper, and garlic powder. Stir to mix.
  • Cover and cook on low for 5-6 hours, or until the steak is tender.
  • In a small bowl, mix the beef broth and cornstarch until smooth. Stir this mixture into the crock pot.
  • Cover and cook on high for an additional 30 minutes or until the sauce has thickened.
  • Serve the pepper steak over hot cooked rice. Enjoy!

Notes

  • For a thicker sauce, you can increase the amount of cornstarch to 3 tablespoons if you prefer a more gravy-like consistency.
  • You can add other vegetables like mushrooms or carrots to customize the dish.
  • This recipe works well with other cuts of beef, such as flank steak or sirloin, if you prefer a leaner option.
