  • 1/2 cup pepperjack cheese, shredded
  • 1/4 cup finely chopped jalapeños (seeds removed for less heat)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional, for extra heat)
  • Sausage casings (optional)

Instructions

  • Mix Ingredients: In a large bowl, combine ground pork, pepperjack cheese, jalapeños, onion, garlic, smoked paprika, cumin, black pepper, salt, and red pepper flakes. Mix well until all ingredients are evenly distributed.
  • Prepare Sausage Casings: If using casings, soak them in water according to the package instructions. Rinse well and set aside.
  • Stuff Sausages (Optional): If using casings, carefully stuff the sausage mixture into the casings using a sausage stuffer. Tie the ends of the casings and twist sausages into desired lengths.
  • Cook Sausages: Heat a grill or skillet over medium heat. Cook sausages for about 6-8 minutes per side, or until they reach an internal temperature of 160°F (71°C) and are nicely browned.
  • Serve: Let sausages rest for a few minutes before slicing. Serve with your favorite sides or on a bun.
