A tangy and flavorful snack, Pickled Bologna is perfect for adding a zesty kick to your party platter or enjoying as a standalone treat.


Ingredients

  • 1 lb bologna, sliced into 1/4-inch thick rounds
  • 2 cups white vinegar
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 tablespoon pickling salt
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon red pepper flakes (optional)
  • 4 cloves garlic, peeled and smashed
  • 1 small onion, thinly sliced
  • 1 bay leaf

Instructions

  • Prepare the Pickling Liquid:
    • In a medium saucepan, combine the vinegar, water, sugar, and pickling salt. Bring to a boil, stirring until the sugar and salt are dissolved. Remove from heat and let cool to room temperature.
  • Assemble the Jar:
    • In a clean, sterilized jar, layer the bologna slices, garlic, onion, and bay leaf.
  • Add Spices:
    • Add mustard seeds, black peppercorns, and red pepper flakes (if using) to the jar.
  • Pour Pickling Liquid:
    • Pour the cooled pickling liquid over the bologna, ensuring all slices are submerged.
  • Refrigerate:
    • Seal the jar with a lid and refrigerate. Allow the bologna to pickle for at least 3 days for the best flavor, though it can be enjoyed sooner.

Notes

Pickled bologna makes a great addition to sandwiches, salads, or as a standalone snack. The longer it sits, the more intense the flavor. Store in the refrigerator for up to 2 weeks.
