- 1 teaspoon red pepper flakes (optional)
- 4 cloves garlic, peeled and smashed
- 1 small onion, thinly sliced
- 1 bay leaf
Instructions
- Prepare the Pickling Liquid:
- In a medium saucepan, combine the vinegar, water, sugar, and pickling salt. Bring to a boil, stirring until the sugar and salt are dissolved. Remove from heat and let cool to room temperature.
- Assemble the Jar:
- In a clean, sterilized jar, layer the bologna slices, garlic, onion, and bay leaf.
- Add Spices:
- Add mustard seeds, black peppercorns, and red pepper flakes (if using) to the jar.
- Pour Pickling Liquid:
- Pour the cooled pickling liquid over the bologna, ensuring all slices are submerged.
- Refrigerate:
- Seal the jar with a lid and refrigerate. Allow the bologna to pickle for at least 3 days for the best flavor, though it can be enjoyed sooner.
Notes
