- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 tbsp soy sauce

- Salt and pepper to taste
Instructions
- In a large skillet, cook diced chicken over medium heat until browned. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and ginger until soft.
- Stir in rice, chicken broth, pineapple chunks, soy sauce, and cooked chicken. Bring to a boil.
