Ingredients

Scale

Protein & Produce

  • 2 boneless, skinless chicken breasts, cut into bite-sized cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into pieces
  • 1 yellow bell pepper, cut into pieces
  • 1 medium red onion, sliced into pieces

Marinade & Seasonings

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1 tablespoon honey or brown sugar
  • Salt, to taste (about ½ teaspoon)
  • Freshly ground black pepper, to taste (about ¼ teaspoon)

Instructions

  1. Prepare the Ingredients: Cut the chicken breasts into bite-sized, even cubes for uniform cooking. Chop fresh pineapple into similar-sized chunks. Slice bell peppers and red onion into pieces suitable for skewering without falling apart.
  2. Make the Marinade: In a bowl, whisk together olive oil, lime juice, garlic powder, honey or brown sugar, salt, and pepper to create a bright, sweet, and savory marinade.
  3. Marinate the Chicken: Add the chicken pieces to the marinade and toss well to coat evenly. Cover and refrigerate for at least 15 minutes or up to 2 hours to deepen the flavor.
  4. Assemble the Kabobs: Thread chicken pieces, pineapple chunks, red onion slices, and bell pepper pieces alternately onto skewers, balancing savory and sweet elements.
  5. Grill to Perfection: Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking. Grill the kabobs for 10-12 minutes, turning occasionally until chicken is cooked through (165°F internal temperature) and vegetables are tender with slight char.
  6. Serve and Enjoy: Remove kabobs from the grill and let them rest briefly. Garnish with fresh cilantro or parsley and serve with lime wedges and your choice of side dishes.

Notes

  • Cut all ingredients into similar-sized pieces to ensure even cooking.
  • Oil grill grates before cooking to prevent sticking.
  • Don’t overcrowd the skewers to allow heat to circulate evenly.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Chicken should reach an internal temperature of 165°F for safe consumption.
