This Pineapple Zucchini Heaven Bread is a moist and flavorful loaf that combines the sweetness of pineapple with the subtle freshness of zucchini.   • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup finely shredded zucchini (about 1 medium zucchini, excess moisture squeezed out)
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  • Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Mix Wet Ingredients:
    In a large bowl, combine the granulated sugar, brown sugar, and melted butter. Add the eggs one at a time, beating well after each addition.
    Stir in the shredded zucchini, crushed pineapple, and vanilla extract.
  • Combine Ingredients:
    Gradually add the dry ingredients to the wet mixture, stirring until just combined.
    Fold in the chopped walnuts or pecans if using.
  • Bake the Bread:
    Pour the batter into the prepared loaf pan and smooth the top.
    Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
