For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/4 cup sour cream
- Pink food coloring
For the Cream Cheese Frosting:
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add the flour mixture, alternating with buttermilk and sour cream, beginning and ending with flour. Mix until just combined.
- Add pink food coloring until the desired color is reached, mixing evenly.
- Divide the batter evenly among the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the cream cheese frosting, beat the softened butter and cream cheese until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
- To assemble, place one cake layer on a serving plate. Spread a layer of frosting over the cake. Repeat with the remaining layers.
- Frost the top and sides of the cake with the remaining frosting. Decorate as desired.
