Description

Pistachio Cherry Linzer Cookies are a delicious twist on the traditional Linzer cookie. Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 2 cups all-purpose flour
  • ½ cup finely ground pistachios
  • ¼ tsp salt
  • 1 cup cherry preserves

Instructions

  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg yolk.
  • Gradually mix in the flour, ground pistachios, and salt until well combined.
  • Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  • Roll out one disc of dough on a lightly floured surface to about 1/8-inch thickness.
  • Use a cookie cutter to cut out an even number of rounds.
  • Use a smaller cookie cutter to cut out the centers of half of the rounds.
  • Place the whole rounds on the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool completely.
  • Spread cherry preserves on the bottom of each whole cookie and sandwich with a cut-out cookie on top.
  • Dust with powdered sugar before serving.

Notes

  • Make sure to let the cookies cool completely before assembling to prevent the jam from melting.
  • You can substitute raspberry or apricot preserves if you prefer a different flavor.
