Ingredients
For the Cookie Bars
-
2 ½ cups all-purpose flour
-
1 (3.4 ounce) box pistachio instant pudding mix
-
1 tsp baking powder
-
½ tsp salt
-
1 cup (2 sticks) unsalted butter, softened
-
1 cup sugar
-
2 large eggs
-
1 tsp vanilla extract
For the Buttercream Frosting
-
½ cup (1 stick) unsalted butter, softened
-
3 cups confectioners’ sugar
-
½ tsp vanilla extract
-
2–3 tbsp milk (adjust for desired consistency)
Instructions
-
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
-
Mix Dry Ingredients: In a bowl, whisk together the flour, pistachio pudding mix, baking powder, and salt.
-
Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
-
Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
-
Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
-
Bake: Spread the dough evenly into the prepared pan. Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
-
Cool: Allow the cookie bars to cool completely in the pan on a wire rack before frosting.
-
Make the Buttercream Frosting: Beat the softened butter in a bowl until creamy. Gradually add the confectioners’ sugar, vanilla extract, and milk. Mix until smooth and fluffy. Adjust the milk to achieve your desired frosting consistency.
-
Frost the Bars: Once the cookie bars are completely cool, spread the buttercream frosting evenly on top.
- Cut and Serve: Slice into bars and serve.
Notes
-
For extra flavor, you can add crushed pistachios to the frosting or sprinkle on top for a nice crunch.
-
You can also add a pinch of green food coloring to the frosting for a festive touch.
- Make sure the cookie bars are completely cooled before frosting to prevent the frosting from melting.
