  • ½ cup (1 stick) unsalted butter, softened

  • 3 cups confectioners’ sugar

  • ½ tsp vanilla extract

  • 23 tbsp milk (adjust for desired consistency)


Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.

  • Mix Dry Ingredients: In a bowl, whisk together the flour, pistachio pudding mix, baking powder, and salt.

  • Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.

  • Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.

  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet ingredients, mixing until just combined.

  • Bake: Spread the dough evenly into the prepared pan. Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

  • Cool: Allow the cookie bars to cool completely in the pan on a wire rack before frosting.

  • Make the Buttercream Frosting: Beat the softened butter in a bowl until creamy. Gradually add the confectioners’ sugar, vanilla extract, and milk. Mix until smooth and fluffy. Adjust the milk to achieve your desired frosting consistency.

  • Frost the Bars: Once the cookie bars are completely cool, spread the buttercream frosting evenly on top.

  • Cut and Serve: Slice into bars and serve.

Notes

  • For extra flavor, you can add crushed pistachios to the frosting or sprinkle on top for a nice crunch.
