A quick and flavorful way to enjoy tender pulled chicken using a rotisserie chicken, perfect for sandwiches, tacos, or over rice!


Ingredients

  • 1 rotisserie chicken
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  • Remove the skin from the rotisserie chicken and discard it. Shred the chicken meat using two forks and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  • Stir in the barbecue sauce, chicken broth, smoked paprika, and onion powder. Bring to a simmer.
  • Add the shredded chicken to the skillet, stirring to coat the chicken with the sauce mixture. Simmer for 10-15 minutes, or until the chicken is heated through and the flavors have melded.
  • Season with salt and pepper to taste. Garnish with fresh parsley if desired.

  • For extra flavor, consider adding a splash of apple cider vinegar to the sauce.
