- 1 rotisserie chicken
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup barbecue sauce
- 1/2 cup chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Remove the skin from the rotisserie chicken and discard it. Shred the chicken meat using two forks and set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Stir in the barbecue sauce, chicken broth, smoked paprika, and onion powder. Bring to a simmer.
- Add the shredded chicken to the skillet, stirring to coat the chicken with the sauce mixture. Simmer for 10-15 minutes, or until the chicken is heated through and the flavors have melded.
- Season with salt and pepper to taste. Garnish with fresh parsley if desired.
