- 1 can (15 oz) pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- Cream cheese frosting (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking pan (9×13 inches works well).
- In a large bowl, mix together the pumpkin puree, sugar, vegetable oil, and eggs until smooth.
- In a separate bowl, combine the flour, baking powder, baking soda, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before frosting with cream cheese frosting.
Notes
For added flavor, consider sprinkling some chopped nuts on top of the frosting or adding a pinch of nutmeg to the batter.
