  • 1 cup granulated sugar

  • 1 cup semi-sweet chocolate chips (plus extra for topping)
  • Optional: 1/2 cup chopped nuts or dried cranberries

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
  • Mix the Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • Mix the Wet Ingredients:
    In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, granulated sugar, and vanilla extract until smooth and well combined.
  • Combine Wet and Dry Ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the muffins dense. Gently fold in the chocolate chips, and if desired, the chopped nuts or dried cranberries.
  • Fill the Muffin Cups:
    Spoon the batter into the prepared muffin cups, filling each about two-thirds full. For extra presentation, sprinkle a few additional chocolate chips on top of each muffin.
  • Bake the Muffins:
    Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
