Scale
- For the Donuts:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- ½ tsp ground cloves
- ¾ cup canned pumpkin puree
- 2 large eggs
- ½ cup unsalted butter, melted
- ½ cup vegetable oil
- ½ cup buttermilk
- 1 tsp vanilla extract
- For the Cinnamon Sugar Coating:
- ½ cup granulated sugar
- 2 tsp ground cinnamon
- ½ cup melted butter
- For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Set your oven to 350°F (175°C). Grease a donut pan with butter or non-stick spray.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Combine Wet Ingredients: In another bowl, mix the pumpkin puree, eggs, melted butter, vegetable oil, buttermilk, and vanilla extract until smooth.
- Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fill Donut Pan: Spoon the batter into the donut pan, filling each cavity about ¾ full.
- Bake: Bake for 12-15 minutes, or until a toothpick inserted into a donut comes out clean. Let the donuts cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Prepare Cream Cheese Filling: Beat the cream cheese, powdered sugar, and vanilla extract in a bowl until smooth. Transfer to a piping bag fitted with a small round tip.
- Fill Donuts: Cut a small slit in each donut and pipe the cream cheese filling into the center.
- Cinnamon Sugar Coating: Combine the granulated sugar and cinnamon in a bowl. Brush each filled donut with melted butter, then roll in the cinnamon sugar mixture until fully coated.
Notes
- Ensure the donuts are completely cool before filling to prevent the cream cheese filling from melting.
- For an extra touch, add chopped nuts or chocolate chips to the batter.
