Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  • In another bowl, mix together the pumpkin puree, brown sugar, granulated sugar, oil, and eggs until well combined.
  • Add the dry ingredients to the wet ingredients and stir until just combined.
  • Fill each muffin liner halfway with the batter.
  • In a small bowl, mix the cream cheese and powdered sugar together. Drop a spoonful of the cream cheese mixture into the center of each muffin and cover with more batter.
  • Bake for 18-20 minutes or until a toothpick comes out clean.

Notes

For extra flavor, consider adding chocolate chips or chopped nuts to the batter.
