- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- In another bowl, mix together the pumpkin puree, brown sugar, granulated sugar, oil, and eggs until well combined.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Fill each muffin liner halfway with the batter.
- In a small bowl, mix the cream cheese and powdered sugar together. Drop a spoonful of the cream cheese mixture into the center of each muffin and cover with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
