Description

Ingredients

  • For the Pumpkin Filling:
    • 2 cups canned pumpkin puree
    • 1 cup granulated sugar
    • 1/2 cup packed brown sugar
    • 1/2 cup heavy cream
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt
  • For the Crisp Topping:
    • 1 cup old-fashioned oats
    • 1/2 cup all-purpose flour
    • 1/2 cup packed brown sugar
    • 1/2 cup unsalted butter, cold and cut into small pieces
    • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • Whisk together all pumpkin filling ingredients in a large bowl until smooth.
  • Pour the pumpkin mixture into the prepared dish.
  • In another bowl, mix the crisp topping ingredients until crumbly; sprinkle over the pumpkin filling.
  • Bake for 40-45 minutes, until topping is golden and filling is set.
  • Cool slightly before serving, optionally with vanilla ice cream.
