Ingredients

Scale
  • 6 hard-boiled eggs
  • 1/4 cup pumpkin puree
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  • Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks.
  • In a small bowl, mash the yolks with the pumpkin puree, mayonnaise, Dijon mustard, paprika, salt, and pepper until smooth and creamy.
  • Spoon or pipe the yolk mixture back into the egg whites, filling the centers.
  • Garnish the deviled eggs with finely chopped chives to give them a fun, festive look.
  • Refrigerate the deviled eggs until ready to serve.

Notes

  • For an extra kick, add a small pinch of cayenne pepper or hot sauce to the filling.
  • If you don’t have Dijon mustard, you can substitute with yellow mustard or any other type you prefer.
