- 1/2 cup granulated sugar
- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 large egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare Dough: Roll out the pie crusts on a lightly floured surface and cut into 4-inch circles or squares.
- Mix Filling: In a bowl, combine the pumpkin puree, granulated sugar, cinnamon, nutmeg, ginger, and salt.
- Assemble Pies: Place a small spoonful of the pumpkin mixture in the center of each dough circle or square. Fold the dough over the filling to form a pocket, and press the edges together with a fork to seal.
- Egg Wash: In a small bowl, whisk together the egg and milk. Brush this mixture over the tops of the hand pies.
- Bake: Arrange the hand pies on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
