These Pumpkin Lasagna Rolls are a delightful twist on traditional lasagna, featuring a creamy pumpkin and ricotta filling, topped with marinara sauce and melted mozzarella. Perfect for a cozy fall dinner!

- 12 lasagna noodles, cooked
- 1 can (15 oz) pumpkin puree
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon nutmeg
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh sage, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, mix pumpkin puree, ricotta cheese, Parmesan, and nutmeg together until smooth.
- Spread 1-2 tablespoons of the pumpkin mixture on each cooked lasagna noodle and roll them up.
- Spread 1 cup of marinara sauce on the bottom of a baking dish and place the lasagna rolls seam side down.
- Pour the remaining marinara sauce over the top of the rolls and sprinkle with shredded mozzarella.
- Bake for 25-30 minutes until the cheese is melted and bubbly. Garnish with chopped fresh sage before serving.
Notes
For added flavor, consider mixing in some cooked sausage or spinach with the pumpkin filling.
