Description

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup buttermilk
  • 4 large eggs
  • 2 tablespoons red food coloring
  • 2 tablespoons blue food coloring
  • 2 tablespoons yellow food coloring
  • 2 tablespoons green food coloring
  • 2 tablespoons purple food coloring
  • 1 tablespoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

For the Cream Cheese Frosting:

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

For Decoration:

  • Rainbow sprinkles
  • Edible glitter

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour six 8-inch round cake pans.
  • Prepare Batter: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time. Mix in vanilla extract.
  • Combine Ingredients: Gradually add the flour mixture and buttermilk alternately, beginning and ending with the flour mixture. Divide the batter evenly into six bowls.
  • Color Batter: Color each bowl of batter with a different food coloring. Spoon each color of batter into the prepared pans in layers, creating a rainbow effect.
  • Bake Cake: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely on wire racks.
  • Make Frosting: For the frosting, beat together butter and cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  • Assemble Cake: Frost and stack the cooled cakes with cream cheese frosting in between layers and on the outside. Decorate with rainbow sprinkles and edible glitter.
