Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour six 8-inch round cake pans.
- Prepare Batter: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time. Mix in vanilla extract.
- Combine Ingredients: Gradually add the flour mixture and buttermilk alternately, beginning and ending with the flour mixture. Divide the batter evenly into six bowls.
- Color Batter: Color each bowl of batter with a different food coloring. Spoon each color of batter into the prepared pans in layers, creating a rainbow effect.
- Bake Cake: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely on wire racks.
- Make Frosting: For the frosting, beat together butter and cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
- Assemble Cake: Frost and stack the cooled cakes with cream cheese frosting in between layers and on the outside. Decorate with rainbow sprinkles and edible glitter.
