Ingredients

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chunks

Instructions

  • In a medium saucepan, combine the raspberries and sugar. Cook over medium heat until the raspberries break down and the sugar is dissolved.
  • Remove from heat and strain the mixture to remove the seeds. Let it cool completely.
  • In a separate bowl, mix the milk, heavy cream, and vanilla extract. Stir in the raspberry mixture.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • During the last few minutes of churning, add in the chocolate chunks.
  • Transfer the ice cream to a container and freeze for at least 4 hours before serving.

Notes

For a smoother texture, you can strain the raspberry mixture twice. This will ensure there are fewer seeds and a creamier consistency in the final product.
