Instructions

  2. Temper the eggs: Slowly pour the warm cream into the egg yolk mixture while whisking constantly to prevent the eggs from scrambling, creating a smooth, silky custard base.
  3. Add fresh raspberries: Gently fold the fresh raspberries into the custard mixture, distributing them evenly without breaking the berries apart.
  4. Pour into ramekins: Divide the custard mixture evenly among individual ramekins, ensuring each contains some raspberries for flavor and color.
  5. Bake in a water bath: Place the ramekins in a deep baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake at 325°F (160°C) until the custard is set but still slightly wobbly in the center, about 40-45 minutes.
