Description

A vibrant and fresh dish featuring tender cheese ravioli tossed with sautéed asparagus, juicy cherry tomatoes, and aromatic garlic, finished with basil and Parmesan.


Ingredients

  • 1 lb cheese ravioli (store-bought or homemade)
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated Parmesan

Instructions

  • Cook ravioli according to package instructions; drain and set aside.
  • In a large pan, heat olive oil over medium heat and sauté garlic for 1 minute until fragrant.
  • Add asparagus and cook until tender, about 4-5 minutes.
  • Add cherry tomatoes and cook for an additional 3 minutes until softened.
  • Toss the cooked ravioli in the pan with the vegetables, adding fresh basil and grated Parmesan before serving.

Notes

For a bit of spice, add red pepper flakes.
