  • 1 box red velvet cake mix (prepared as directed)
  • 24 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • Cream cheese frosting (for layering and frosting)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  • Prepare the red velvet cake mix according to the package instructions, dividing the batter evenly between the two prepared pans. Bake as directed and let the cakes cool completely.
  • For the cheesecake layer, beat the softened cream cheese, sugar, vanilla extract, and eggs in a mixing bowl until smooth. Pour the mixture into a separate 8-inch pan and bake for 30-35 minutes, or until set. Allow to cool completely.
  • Once the cakes and cheesecake are cooled, assemble the cake by layering the cheesecake between the two red velvet cakes. Frost the entire cake with cream cheese frosting.
