This refreshing lime mousse cheesecake combines the tanginess of lime with a creamy texture, all on a buttery graham cracker crust. Perfect for a light dessert!

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup lime juice
  • 1 tsp lime zest
  • 1/2 cup whipped cream

Instructions

  • Preheat the oven to 350°F (if you prefer a baked cheesecake, otherwise, skip this step).
  • In a bowl, mix graham cracker crumbs with melted butter and press the mixture into the bottom of a springform pan to form the crust.
  • In another bowl, beat together the cream cheese, sugar, lime juice, and lime zest until smooth and creamy.
  • Gently fold in the whipped cream until combined.
  • Pour the lime cheesecake mixture over the crust and smooth the top.
  • Chill in the refrigerator for at least 4 hours, or until set.
  • Serve chilled, garnished with lime slices or zest if desired.
