  • 2 tbsp olive oil
  • 1 tsp salt

  • 1/2 tsp turmeric (optional)
  • 1 cup rice (washed)
  • 4 cups chicken broth or water
  • Fresh parsley or cilantro for garnish

Instructions

  • Sear the chicken:
    • Heat olive oil in a large pot over medium heat. Add the chicken pieces and sear until golden on both sides. Remove from the pot and set aside.
  • Cook the vegetables:
    • In the same pot, sauté the diced onions, garlic, sliced carrots, and bell peppers until softened. Add the chopped tomatoes and cook until they break down into a thick sauce.
  • Add spices and broth:
    • Stir in salt, pepper, paprika, and optional turmeric. Return the seared chicken to the pot and pour in the chicken broth or water.
  • Cook the rice:
    • Add the washed rice to the pot and stir. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
  • Serve:
    • Garnish with fresh parsley or cilantro. Serve hot and enjoy the comforting flavors of this hearty stew!

  • Chicken Options: You can use chicken breasts instead of thighs or drumsticks if you prefer leaner meat, but thighs and drumsticks provide more flavor and tenderness.
