- 1 tsp salt
- 1/2 tsp black pepper

- 1 cup rice (washed)
- 4 cups chicken broth or water
- Fresh parsley or cilantro for garnish
Instructions
- Sear the chicken:
- Heat olive oil in a large pot over medium heat. Add the chicken pieces and sear until golden on both sides. Remove from the pot and set aside.
- Cook the vegetables:
- In the same pot, sauté the diced onions, garlic, sliced carrots, and bell peppers until softened. Add the chopped tomatoes and cook until they break down into a thick sauce.
- Add spices and broth:
- Stir in salt, pepper, paprika, and optional turmeric. Return the seared chicken to the pot and pour in the chicken broth or water.
- Cook the rice:
- Add the washed rice to the pot and stir. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
- Serve:
