Description

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup chocolate chips

Instructions

  • Preheat the oven to 375°F. Line a muffin tin with paper liners.
  • In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
  • In a separate bowl, whisk together milk, vegetable oil, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • In another bowl, beat cream cheese and powdered sugar until smooth.
  • Fill each muffin cup halfway with chocolate batter, add a spoonful of cream cheese mixture, then top with more chocolate batter.
  • Sprinkle chocolate chips on top of each muffin.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool before serving.

Notes

  • For extra richness, add a teaspoon of espresso powder to the muffin batter to enhance the chocolate flavor.
  • Store the muffins in an airtight container at room temperature for up to 3 days.
