- 1 tbsp baking powder

- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 375°F. Line a muffin tin with paper liners.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together milk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- In another bowl, beat cream cheese and powdered sugar until smooth.
- Fill each muffin cup halfway with chocolate batter, add a spoonful of cream cheese mixture, then top with more chocolate batter.
- Sprinkle chocolate chips on top of each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool before serving.
Notes
- For extra richness, add a teaspoon of espresso powder to the muffin batter to enhance the chocolate flavor.
- Store the muffins in an airtight container at room temperature for up to 3 days.
