A creamy and flavorful quiche made with ricotta cheese, spinach, and mozzarella, all baked in a buttery pie crust. Perfect for brunch or a light dinner.


Ingredients

  • 1 refrigerated pie crust
  • 1 cup ricotta cheese
  • 1 cup chopped spinach
  • 1/2 cup shredded mozzarella cheese
  • 4 eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Press the refrigerated pie crust into a 9-inch pie dish, ensuring it’s evenly spread across the bottom and sides.
  • In a bowl, mix together ricotta cheese, chopped spinach, mozzarella cheese, eggs, milk, salt, and pepper until well combined.
  • Pour the mixture into the prepared pie crust, smoothing the top.
  • Bake in the preheated oven for 40-45 minutes, or until the quiche is set and slightly golden on top.
  • Allow the quiche to cool for a few minutes before slicing and serving.

Notes

Feel free to add other vegetables such as mushrooms or bell peppers, or even cooked bacon or sausage for extra flavor. This quiche can be served warm or at room temperature, making it ideal for any occasion.
