Ingredients

  • 1 lb rigatoni
  • 1 lb Italian sausage
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook rigatoni according to package instructions. Drain and set aside.
  • In a large skillet, cook Italian sausage over medium heat until browned. Remove from the skillet and set aside.
  • In the same skillet, sauté bell peppers, onion, and garlic until softened.
  • Add crushed tomatoes and chicken broth to the skillet. Bring to a simmer.
  • Add the cooked sausage back to the skillet and stir to combine.
  • Add cooked rigatoni to the skillet and toss to coat in the sauce.
  • Stir in grated Parmesan cheese and season with salt and pepper.
  • Serve hot, garnished with fresh basil.
