Description

Golden and crisp on the outside, tender and buttery on the inside—these potatoes are infused with rich garlic butter, topped with nutty Parmesan, and brightened with fresh parsley. A comforting side dish that elevates any meal.


Ingredients

  • 3 pounds red potatoes, rinsed and quartered

  • ¼ cup olive oil

  • 8 cloves garlic, finely minced

  • 1 cup grated Parmesan cheese

  • 2 tablespoons unsalted butter

  • 3 tablespoons chopped fresh parsley

  • Salt and black pepper, to taste


Instructions

  • Preheat oven to 400°F (200°C).

  • Optional: Parboil potatoes in salted water for 5–8 minutes to speed up roasting. Drain and let dry.

  • In a large bowl, mix olive oil, minced garlic, salt, pepper, and Parmesan cheese. Add potatoes and toss to coat.

  • Arrange potatoes cut-side down on a baking sheet in a single layer.

  • Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

  • In a small saucepan, melt the butter and mix in the chopped parsley.

  • Drizzle the garlic butter over the hot roasted potatoes and toss gently.

  • Serve immediately.

Notes

  • Parboiling is optional but gives a fluffier inside.

  • Freshly grated Parmesan yields the best flavor.

  • Can be topped with bacon bits or extra herbs if desired.
