Ingredients

3 pounds red potatoes, rinsed and quartered

¼ cup olive oil

8 cloves garlic, finely minced

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 tablespoons chopped fresh parsley

Salt and black pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

Optional: Parboil potatoes in salted water for 5–8 minutes to speed up roasting. Drain and let dry.

In a large bowl, mix olive oil, minced garlic, salt, pepper, and Parmesan cheese. Add potatoes and toss to coat.

Arrange potatoes cut-side down on a baking sheet in a single layer.

Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

In a small saucepan, melt the butter and mix in the chopped parsley.

Drizzle the garlic butter over the hot roasted potatoes and toss gently.
