  • 2 large sweet potatoes, peeled and sliced into ½-inch rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 3 tbsp honey
  • ½ cup crumbled feta cheese
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prepare Sweet Potatoes: Arrange the sweet potato rounds on the baking sheet in a single layer. Drizzle with olive oil and season with salt, pepper, and dried thyme. Toss to coat evenly.
