  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar

Instructions

  • Soak the Pineapple: In a bowl, combine the dark rum and coconut rum. Soak the pineapple rings in the rum mixture for about 30 minutes to an hour, allowing them to absorb the flavors.
  • Prepare the Coating: In a shallow bowl, whisk together the flour and coconut flakes. In another bowl, beat the eggs and coconut milk together until smooth.
  • Dip and Coat: After the pineapple rings have soaked, dip each one into the egg mixture, followed by the flour and coconut mixture, pressing gently to coat the pineapple evenly.
  • Fry the Pineapple: Heat vegetable oil in a deep pan or skillet over medium heat. Fry the coated pineapple rings for 2-3 minutes on each side or until golden and crispy. Remove from the oil and place on a paper towel to drain any excess oil.
  • Make the Dip: In a small bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  • Serve: Arrange the fried pineapple rings on a plate and serve with the cream cheese dip on the side.
